“The goal? Put the consumer at the center of our gastronomic heritage,” De Bellis explained. “And what vehicle is best than pizza?” This question encapsulates the ethos of Spiedo & Margherita, which seeks to connect diners with both classic and contemporary Italian tastes, crafted with care and nostalgia.

The menu is thoughtfully curated with offerings such as the traditional Roman-style tonda pizza—characterized by its thin crust and light, airy texture—crafted with high-hydration dough to achieve optimal flavor and digestibility. Chef Daniele Maragnani, Executive Chef at the venue, emphasizes, “Our chicken is carefully marinated with Mediterranean herbs and citrus, ensuring exceptional flavor.”

For comfort food lovers, the establishment boasts scrumptious treats like suppli (fried rice balls) and the renowned Roman Magnes—dishes made with fresh ingredients sourced from local suppliers. “Our pizza is light and highly digestible, utilizing important nutrients from stone-ground flours,” noted Daniele Covi, one of the master pizzaioli at Spiedo & Margherita.

Sundays at Spiedo & Margherita are particularly special, with traditional “Sunday Dinner” offerings featuring lasagna, homemade gnocchi, and the standout pollo alla cacciatora, all meant to evoke the essence of home-cooked meals.
