Manifest Restaurant Launches Mani-Guest Chef Series

Tomás Gormley kicks off the series with an exclusive six-course tasting menu.

Manifest, one of Liverpool's most acclaimed dining spots, is launching an exciting new guest chef series, ‘Mani-Guest’, kicking off on 2 March 2025 with a headline-worthy debut. This new series from Manifest will bring some of the most trailblazing and original chefs from across the UK to Liverpool.

The first guest chef? None other than Tomás Gormley, one of Scotland’s most exciting culinary talents and the mastermind behind Edinburgh’s Skua and Cardinal. Paul Durand, Manifest’s Chef Patron and co-owner, shared his enthusiasm, stating, “Originally hailing from the 21212 kitchen like myself, Tomás has made a name for himself as a progressive and ambitious chef/restaurateur. With an ethos...we are MADE UP to have him cooking here at Manifest. I’d book your space quick if I were you, this is going to be a sell out!”

Diners can expect two sittings on 2 March, one at 2.00pm and another at 6.00pm, where they’ll experience a six-course tasting menu priced at £100 per person, with the option to add expertly paired wines from Manifest’s exceptional wine selection.

Since opening its doors in 2022, Manifest has firmly established itself as one of Liverpool’s most celebrated restaurants, thanks to the vision of Paul Durand and his wife and business partner, Charlotte Jones. Nestled in a historic warehouse in the Baltic Triangle, Manifest is a seamless blend of history, creativity, and modern fine dining. Its name, Manifest, is deeply rooted in the area’s shipping heritage, referring to the document detailing the cargo on a vessel, which ties directly to Chef Paul’s philosophy of sourcing the finest ingredients inspired by the global trade links once defining Liverpool’s docks.

Drawing inspiration from Bologna, Bordeaux, and other European cities known for their thriving, laid-back fine dining scenes, Manifest offers a relaxed yet refined experience, celebrating the best produce from Merseyside and the North of England. Over the last two years, Manifest has racked up an impressive list of accolades, including its entry to the Michelin Guide just four months after opening, three placements as one of Square Meal’s Top 100 restaurants, and twice being included in National Restaurant Awards Top 100.

Paul Durand was even named 'One to Watch' at The Staff Canteen Awards 2022, highlighting his rising influence and the restaurant's commitment to quality and innovation.
