Fat Tuesday 2025: Bakeries Prepare For Celebration

With new flavors and cherished traditions, local bakeries honor Fat Tuesday and community ties.

MADISON, Wis. -- Fat Tuesday is right around the corner, falling on March 4, 2025, and local bakeries are gearing up for one of the busiest days of the year. Among them, Greenbush Bakery has established itself as a favorite among Madison residents and has made special preparations to celebrate the occasion.

Recently, News 3 Now This Morning took viewers behind the scenes at Greenbush Bakery, highlighting the efforts involved leading up to Fat Tuesday. The preparations at the bakery take on added meaning this year as they mark the first anniversary of the passing of Marvin "Donut Man" Miller, the original founder who built the establishment over nearly three decades.

Miller, who left behind not just cherished pastries but also close community ties, passed away on March 8, 2024. His grandson, Taylor Carlson, now heads the bakery, carrying on the legacy of his grandfather who was known for his dedication to quality and community involvement.

"Greenbush Bakery was his pride and joy," Taylor Carlson stated. With the support of family, including Taylor's mother, Lisa Carlson, who still contributes on weekends, and his son-in-law Jeff Carlson managing operations, the bakery remains committed to serving the community and honoring Marvin's legacy.

Meanwhile, across state lines, Parma, Ohio, will also celebrate Fat Tuesday with its own delicious traditions at Rudy’s Strudel and Bakery. The bakery is famous for its annual paczki party, which kicks off early every year, as customers eagerly line up for the treats well before sunrise.

“Paczki are rich, deep-fried leavened dough pastries filled with various flavors, eaten during the festive Carnival season leading up to Lent,” explained the owner of Rudy's, Lidia Trempe. For this occasion, the bakery is once again introducing new flavors to excite its patrons.

Earlier this year, Trempe revealed two new paczki flavors during her appearance on the morning show. The first, the Superhost, was created to honor Marty Sullivan and features three buttercream fillings inspired by the classic Superman ice cream - cherry, vanilla, and the unique blue moon flavor, which has almond notes.

Another new creation is the Blood Orange Mimosa Buttercream, developed in partnership with Immigrant Son Brewing, aligning with International Women’s Day on March 8. “This one’s for you, ladies!” Trempe enthused about the flavor during its launch event.

Rudy’s Strudel boasts traditional options as well, including apple, blueberry, cherry, lemon, pineapple, raspberry, and strawberry paczki, combining sweet and savory delights for the celebration. With roots extending several decades, the paczki party has become something of local lore, symbolizing the community's approach to festivities and indulgence.
