"Choosing certified Abbacchio not only supports an excellent product but also a territory, a history, and local communities," he stated, underlining the significance of this choice for many Italian families.

According to Talanas, four out of ten Italian families traditionally consume lamb at Easter, making it a staple of the holiday celebration. However, the market dynamics are troubling. Of the approximately 550,000 lambs available during this season, over 300,000 are imported, often sold at prices 40% lower than their certified national counterparts. This disparity creates a competitive disadvantage for local producers who adhere to strict quality and ethical standards.

The Consorzio, established in 2010, has been dedicated to preserving the landscape and ensuring animal welfare since its inception. Talanas explained, "In a market dominated by price cuts, misinformation threatens local businesses that struggle to compete with large foreign imports. It is crucial to raise consumer awareness, and we have been committed to this since 2010, ensuring that those who choose us are fully informed about traceability throughout our supply chain and can recognize the value of our production."

Imported lambs often lack traceability and are raised in conditions that do not meet the ethical standards set by the Consorzio. In a recent presentation at the renowned restaurant L'Arcangelo, chef Arcangelo Dandini showcased the versatility of Abbacchio Romano through a special menu featuring traditional Roman dishes. The menu included iconic recipes such as rigatoni with white Abbacchio ragù, artichokes, and mint, as well as a unique version of Abbacchio "cacio e ova" served with sautéed field vegetables. This culinary celebration aims to highlight the excellence of this typical Roman product and its integral role in local cuisine.
